Just change "YOURPASSWORD" below (keep the xxx:es) and voila!

UPDATE `customer_entity`
SET `password_hash` = CONCAT(SHA2('xxxxxxxxYOURPASSWORD', 256), ':xxxxxxxx:1')
WHERE `entity_id` = 1;
